Roasted Red Bell Pepper dip

Ingredients
  • 1 c roasted red bell pepper, diced, drained and patted dry
  • 8 oz cream cheese, softened
  • ½ c mayonnaise
  • 1 Tbls Dijon mustard
  • 2 c shredded cheese (any kind, I used a Mexican blend)
  • ½ c Parmesan cheese
  • 1½ Tbls onion, minced
  • 2 cloves of garlic, minced
Instructions
  1. Preheat oven to 350 degrees.
  2. Place all ingredients in baking dish and stir until well combined. If you are using jarred peppers, drain off the liquid before dicing. If you are using peppers from your frozen stash, you're good to go. I use ⅓ less fat cream cheese and light mayo because I think it makes the dip creamier (and I use that as an excuse to eat more!). Feel free to use the full-fat versions.
  3. Combine all ingredients thoroughly in the baking dish and bake for 20-25 minutes.
  4. You are looking for the cheese to melt and get slightly browned and bubbly. Serve hot.

Buffalo Chicken Cupcakes

Ingredients
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup Ranch dressing
  • 1/2 cup Buffalo wing sauce (Frank's is the brand I like)
  • 1 cup shredded cheddar cheese, divided
  • 1 1/2 cups cooked and shredded chicken
  • 24 wonton wrappers (see Note)
  • 1/4 cup blue cheese crumbles

Instructions
  1. Preheat oven to 375 degrees. Spray muffin tin very lightly with cooking spray.
  2. In a medium bowl, combine softened cream cheese, Ranch dressing, wing sauce and 3/4 cheddar cheese (save remaining 1/4 cup for topping). You can soften the mixture slightly in the microwave if needed to make it come together. Stir in shredded chicken.
  3. Start layering your cupcakes. Begin with a wonton wrapper and press it into the bottom of each muffin tin. Spoon about a tablespoon of the chicken mixture. Top with another wonton wrapper and add another tablespoon of chicken mixture. Sprinkle with remaining cheddar cheese and a little blue cheese.
  4. Bake for 18 minutes or until edges are brown. Check cupcakes after 10 minutes into cooking and if edges are browned cover the cupcakes with foil for the remaining cooking time. Remove from oven and let cool for 5 minutes. To remove, use a knife to loosen the edges then pop each cupcake out.
  5. For mini cupcakes: Cut each wonton wrapper into 4 squares. Layer wonton, about 1 teaspoon of filling, wonton, then another teaspoon of filling. Top with shredded cheese and blue cheese. Bake for 10 minutes. Let cool slightly, then remove from pan.
Notes
Wonton wrappers can be found in the refrigerated section of your produce section usually on a wall by the mushrooms, broccoli, and dressings. Just ask someone if they aren't there.

Salsa Roll-ups

Ingredients


Instructions

  1. Mix philadelphia cream cheese and salsa; spread onto tortillas. Top with remaining ingredients.
  2. Roll up tortillas tightly. Cut each crosswise into 5 slices

Apple dip

1 package of cream cheese
2/3 cup brown sugar
caramel
heath bar

mix cream cheese ad brown sugar until blended
put in pan
pour caramel on top
break up heath bar on top of caramel

slice apples and enjoy!!

Quick Fruited Salsa

2 cans mandarin oranges- drained
1 can pineapple tidbits in juice- drained
1 can black beans rinsed and drained
1 sweet red pepper chopped
1/2 cup chopped red onion
1 tb dried cilantro
2 tab chopped canned jalapeno pepper
1 tab lime juice
1/4 teaspoon minced garlic

drain oranges - let stand on several layers of paper towels to absorb excess moisture. slice in half
combine pineapple and remaining 7 ingredients in a med mixing bowl. add oranges stirring gently to combine.
Let chill before serving

Kielbasa

2lbs kielbasa

1/2c ketchup
1/2c red wine vinegar
1/2 cup brown sugar
1 tab soy sauce

Bread Boat Dip

Rye bread
2 cups Mayo
16oz sour cream
1tb dill weed
chipped beef (package/jar)
2-3tb dry onion
1-2 tb parsley

Hash Brown Bake

2lb cubed frozen potatoes (partially thawed)
1 can cream of Mushroom soup (I use cream of chicken)
1 med. chopped onion
1 stick of melted butter
2 cups shredded ched. cheese
1 tb chopped parsley
1lb cooked cubed ham

Mix everything together
spread in 13x9 pan
bake uncovered 375 for an hour!

Rye Rounds

Rye Rounds
1 cup mayo
1 cup of sharp cheddar cheese
7 slices bacon
horseradish to taste (drain it or gets watery)
rye rounds

Mix, spread, cook until cheese is bubbly

Chicken Wing Dip

1 rotisserie chicken- I think this is the easiest or you can use chicken breast and cook and shred
1 stick cream cheese
1 bottle of Chunky blue Cheese dressing
1 bottle chicken wing sauce
mozzarella cheese

- Spread cream cheese in 9x9 pan
- Add shredded chicken, blue cheese dressing (eyeball how much you want), chicken wing sauce (eyeball), Moz. cheese (eyeball)
- Cook 350 for about 20 minutes or until cheese has melted

This is ALWAYS a hit!!

Pizza Dough

1 cup of warm water
1 package of dry yeast
1 teaspoon of sugar
1 teaspoon of salt
2 tablespoons olive oil
2 1/2 cups flour

- Mix warm water and yeast together until the yeast has dissolved
- Add the above inredients
- Stir around till ball forms and let sit for about 5 minutes
- Kneed it on until it is in a firm ball
- Roll out on a floured counter
- Place on oiled pan or pizza stone and top as desired

Pineapple salsa dip

- Soften one block of cream cheese and spread on the bottom of over safe dish
- Spread a jar of pineapple (or any other flavor) salsa on top
- Sprinkle with Cheddar Cheese

Bake in the oven on 350 for about 20-30 minutes

Cheese Dip

Mix all ingredients together:

1 cup mayo
1/4 cup onion
1 1/4 cup of shredded cheddar cheese
1 teaspoon horseradish- drained

cook on 400 for about 10 minutes

Artichoke Dip

1 jar seasoned artichokes
1/2 cup mayo
1/2 cup Parmesan cheese

- Slice artichokes and add to mayo and cheese
- cook on 350 for about 20 minutes
